Terre Restaurant – serving show stoppers

The French word terre, directly translated to English means earth. The clever people who manage Terre Restaurant, located at Dromana Estate Vineyard, have interpreted the translation of the word as ‘being from earth’ which is quintessential to the style and concept of this restaurant. Debra Mar, RPP FM writer and presenter visited Terre to discover the fused flavours of quality food and wine.

Rowan Herrald, Head Chef together with his wife Janine, Pastry Chef and Clinton Trevisi, Restaurant Manager, form the three principles at Terre.

Janine has a real Masterchef story. At 39, she left her job as a Practice Manager for a Micro Surgeon to follow her love and passion for cooking. She completed a 3 year Pastry Chef apprenticeship at Gill’s Diner in Melbourne in 2½ years. Here she met Rowan, then moved to Dunkeld where both worked at The Royal Mail Hotel where they met Clinton. Rowan’s past experience also includes Circa The Prince in St. Kilda, Heirloom in Melbourne and most recently as head chef at Salix. Clinton, an experienced industry professional spent four years running The Royal Mail, set up and launched Terminus at Flinders Hotel, amongst other stints at other highly acclaimed restaurants throughout Melbourne over the last 12 years.

Rowan and Janine are one with the earth. Choosing to embrace what’s on offer from local growers and pick wild mushrooms, wild herbs and organic vegetables that thrive on the Dromana Estate property. The menu changes often, best utilising the micro seasons of each ingredient, to provide the peak flavours in food.

When asked, “Why Dromana Estate,” and “Why the Peninsula to start up Terre Restaurant,” Janine and Rowan both agree the opportunity was too good to miss and both wanted to be involved in the food and wine scene here. They were also were drawn to the historical significance of the Dromana Estate property, labelled an iconic established winery on the Mornington Peninsula. “It’s exciting being involved, re-establishing such an iconic estate and recognising it’s potential,” Rowan said.

The cuisine at Terre is Modern European, and dishes only make it to the menu after many tests, trials, feedback, critiques and analysing by the team. When asked what makes a good chef, they replied, “You really need good time management skills and organisational skills, and preparation is crucial to providing an excellent service.”

Rowan and Janine make everything from scratch including tasty stocks, smoked food and employ inventive techniques to add an element of surprise to dishes. Experience the intimate winter menu consisting of dishes that boast great fresh winter produce, plated with contemporary precision and style.
Clinton Trevisi, Restaurant Manager has created a fresh openness to the dining room, featuring worn rustic floorboards and an open wood fireplace. There is an outer terrace to make diners feel part of the vine vista and outdoors bounded with an Edna Walling designed garden, and packaged in this classic colonial white weatherboard dwelling.

Dromana Estate produces premium quality cool climate varietals such as award winning pinot and chardonnay. These and many others are grown and produced on the estate, and available from the cellar door, or while dining in Terre.
